Gluten Free Thin Crust Pizza

On weekends Pizza is always a treat.  My husband wanted to try a new pizza place near our house, so while he enjoyed some take out, we made pizza from scratch.  This is the first pizza crust recipe I ever made and loved it, so we continue to make this our standard crust. It is super simple and do not be alarmed that the batter is so thin, it is meant to be poured and creates two delicious incredibly thin pizzas.

This recipe is for a bread machine, I have the Cuisinart Convection Bread Maker which has numerous different settings and one of them is a special cycle for Gluten Free Bread, it works amazing.  However since it makes a thin batter, if you do not have a bread maker I think this could easily be mixed/kneaded by hand.

Gluten Free Thin Crust Pizza
Makes two 12 inch pizzas

1/3 Cup Tapioca Starch
2/3 Cup Bean Flour (I used Garbanzo/Chickpea Flour) 
2/3 Cup Brown Rice Flour
2/3 Cup Sorghum Flour
1 tsp salt
1 tsp sugar 
1/2 tsp guar gum or xanthum gum
1 tsp dried oregano and/or basil
1 1/2 tsp instant or bread machine yeast
2 tbsp canola oil
1 tsp cider vinegar
1 3/4 Cups water (room temperature)
1 tbsp parmesan cheese (optional)

1. Grease two 12 inch pizza pans and set aside. 
2. Pour oil, vinegar and water into bread machine pan.
3. Combine tapioca starch, bean flour, brown rice flour, sorghum flour, salt, sugar, guar/xanthum gum, dried herbs, and yeast in a mixing bowl.  Add to wet ingredients in bread machine pan.  
4. Select Gluten Free Cycle or Dough Cycle on bread machine, as the dough is mixing, scrape sides to make sure all ingredients are incorporated. Allow bread machine to finish kneading cycle only and then remove pan from bread machine. 
5. Pour half of each dough onto each pan and spread to edges of pan.
6. Let pans sit for 15 minutes to allow dough to slightly rise
7. Preheat over to 400 F
8.. After letting dough rise, if using parmesan cheese, sprinkle top of each pizza with cheese. 
9. Bake for 12-14 minutes until crust is slightly browned on bottom. 
10. Top with favorite toppings and cook for 10-12 minutes or let crust cool, wrap and freeze.
